Bass (or Tilapia) with Garlic Sauce

Bass (or Tilapia) with Garlic Sauce

Ingredients:

  • 1 pound Fish Filets, per person
  • 2 tablespoons Vegetable Oil
  • ¼ cup Water
  • ¼ cup Vermouth
  • ¼ teaspoon Salt
  • ¼ teaspoon Pepper
  • 4 cloves Garlic, minced
  • 2 tablespoons Parsley, chopped
  • ½ Lemon, cut into wedges

Directions: 1. In a bowl combine:
Water, Vermouth, Salt, Pepper and minced Garlic
2. Cut fish crosswise into 4 equal pieces.
or Separated filets into individual pieces
3. Heat oil in a large nonstick skillet over high heat.
4. Add fish, and cook 1 minute.
5. Turn fish over; gradually add bowl of ingredients (water through garlic) to skillet.
6. Cover, reduce heat to medium, and cook 3 minutes or until fish flakes easily when tested with a fork.
7. Remove fish from skillet; set aside, and keep warm.
8. Cook the vermouth mixture over high heat 1 minute or until slightly thickened.
9. Pour over fish; sprinkle with parsley.
